Recipe for Bringal curry (gravy)

Although I thought it would be tough, bringal curry is really easy to make. 

 1 teaspoon mustard seeds
2 onions chopped (in half moon shapes)
1 teaspoon ginger-garlic paste
1 tsp corainder powder or seeds
2 tablespoon tomato paste
1/2 cup water
salt to taste

Prior starting cut the bringals into cube shapes add about half a teaspoon of salt and press so with a plate so the excess water drains out (you'd be surprised how much water it contains!). Keep this for about half an hour. Once done, drain out the water and fry. I normally add a little tumeric(hladi) and chilli powder when frying. Fry till crisp. 

For the gravy, add the mustard seeds and wait for them to pop, then add the onions, once brown and the  coriander powder and ginger garlic paste. Once all the flavours have blended together add the tomato paste and stir. Once the gravy is thick add the1/2 cup of water. 

Once the gravy is done, add the fried brinjal and cover it with gravy.
Garnish with corainder.
